Select this option if you want to pick your own cuts, how they are cut, and so forth. You pay us for the meat itself, listed below, and then pay the butcher for the processing (or we can take care of that and you pay us this as well).
 
We will need to get ahold of you for this option so we can fill out our cut sheet and convey any other information.
